If you start in 1900 and see modern oil rigs, fisheries, trucks and forklifts around your industries, you haven't missed a setting. In the base game, industries, depots and maintenance buildings use one model for every year, so the same modern details appear from 1900 to 2050. There's no option to change that. The Industry Era Details mod hides most of the modern yard equipment until later decades, but it does not replace oil platforms.
Is there a setting for era-appropriate industries?
No. Players asking about "anachronistic things on the map" all see the same thing, and nobody found a setting for it. Stations and bus stops do change as the years go by, but depots and maintenance buildings stay the same building in 1900 and 2020. Players also point out that these buildings no longer differ by region either, unlike in Transport Fever 2.
It's purely visual: industries produce and accept cargo the same way whatever they look like. Urban Games hasn't said whether period models are planned, and players are hoping for something like the residential buildings, which already rebuild themselves into newer styles over time.
How do you hide the modern equipment?
Industry Era Details (on Nexus Mods) hides 91 selected models and brings them back in stages as the calendar moves on:

It only changes which existing models are visible, so production rules stay exactly as they are and you never have to rebuild anything. The years are a look-and-feel preset, not real invention dates, and some original equipment stays visible throughout.
Install it
Close the game and extract the download into the local/mods folder in your Transport Fever 3 user-data folder. The result should be local/mods/industry_era_details_1/mod.json. If you can't find that folder, see Find and Move the Mod Folder.
Enable it for your game
Activate Industry Era Details in the game's mod selection when you start a new game, or in an existing save's mod settings before loading it.
Check an industry
Load the game and look at an industry yard in an early year. The forklifts and trucks should be gone while the factory itself is unchanged.
To update, close the game and replace the industry_era_details_1 folder; keep only one copy. To remove it, disable it in the save's mod selection before loading, then delete the folder.
The mod does not replace oil platforms or change where industries spawn, so offshore oil rigs still look modern in 1900. Like other gameplay-adjacent mods, it may also stop achievements counting; see Achievements Not Unlocking before you enable it on a save you care about.
